  • Egg wash: 1 large egg beaten with 1 tablespoon milk
  • 1 (15-oz.) can pumpkin puree (about 2 cups)
  • 3 large eggs
  • 1¼ cups packed light or dark brown sugar
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon freshly ground black pepper
  • 1 cup heavy cream
  • ¼ cup milk any kind
  • Pie dough leaves cut from extra crust purely decorative
  • Sugared cranberries: 1 cup fresh cranberries simmered briefly in a syrup of ¾ cup water + ¾ cup sugar dried, then rolled in ½ cup sugar

Equipment

  • 9-inch pie plate

Method

  1. Prep the crust (ideally the night before). Roll your pie dough into a 9-inch (preferably deep-dish) pie plate, crimp the edges, and refrigerate. Cold dough = flaky crust. If making leaf decorations, cut them now and chill them too.
  2. Par-bake the crust. Heat the oven to 375°F (190°C). Line the chilled crust with parchment, fill with pie weights or dried beans, and bake 10 minutes. Remove weights. Brush the edges lightly with egg wash.
  3. Whisk the filling. In a large bowl, whisk together the pumpkin puree, eggs, brown sugar, cornstarch, salt, cinnamon, ginger, nutmeg, cloves, and black pepper until completely smooth. Whisk in the heavy cream and milk.
  4. Fill and bake. Pour the filling into the warm par-baked crust (fill about ¾ full if your pan isn't deep-dish). Bake at 375°F for 55–60 minutes. After about 25 minutes, shield the crust edges with foil or a pie shield so they don't over-brown.
  5. Judge doneness by the wobble. The pie is done when the edges are set but the very center still jiggles slightly when nudged — like gelatin, not liquid. It will finish setting as it cools. Start checking at 50 minutes.
  6. Cool completely. Transfer to a wire rack and cool for at least 3 hours (yes, really — slicing warm pie = soupy slices). Decorate with sugared cranberries and pastry leaves if you like, and serve with whipped cream.

Notes

Pull from oven when the center still wobbles; cool 3+ hours before slicing.
